Making this at home means you get to choose the ingredients you use, which means you can make one heck of a healthy chocolate pudding!
I use a raw cacao powder, which is a unprocessed chocolate powder with nothing else added to it (you can find this at your local health store). The cacao bean is one of the highest sources of antioxidants and is rich in magnesium.
Avocados are a great source of healthy fats and make the perfect pudding consistency when blended, you would never even know it’s avocado in there!
Add in coconut milk, maple syrup and vanilla and will soon be in chocolate pudding heaven.
This is a favourite of mine and I have a feeling it may soon be yours, too!
Chocolate Avocado Pudding
Recipe by Susanna Deering, RHN
What you will need: Blender, spatula, spoons & bowls for serving
Makes 2 large or 4 small servings
2 ripe avocados
1/4 cup or maple syrup or honey
1/4 cup raw cacao powder
2 teaspoons vanilla extract
1/2 to 1 cup coconut milk (or milk of choice)
- Add ingredients to a blender, starting with ½ cup of the milk only
- Blend until smooth and add in additional milk until you get a nice pudding like consistency
- Serve in bowls and try and resist not eating it all at once!
